Job Requirements

  • Good understanding of Food & Beverage operations, is hands-on and a team player.
  • Hotel Management Graduate preferred
  • Fluent in English. Other key foreign languages are is an advantage.
  • Min 5 years experience in a 5 star hotel/resort environment, in which 3 years in the position of Restaurant Manager.
  • Training certificates in food & beverage service.
  • Winery training is an advantage.
  • Possess superior time management and organization skills with the ability to multitask.
  • Excellent customer service skills.
  • Excellent grooming standards.
  • Leadership skills.

 

Job Description

  • Financial:
    • To know daily actual and budgeted figures of covers, average check, revenue and costs.
    • To establish, monitor and control operational costs for their outlet.
  • Operational:
    • To continuously check that guests are receiving the service outlined as per the standards set for his/her restaurant.
    • To ensure that the guests are received by the hostess courteously and given pre-set tables.
    • To greet guests upon their arrival and departure, at the table.
    • To communicate well with guests and remember the names of regular guests and all possible In house guests.
    • To check that guests receive the food quality as per standard set by the Chef.
    • Attend to all guest complaints in the outlet and initiate immediate corrective action.
    • To ensure that the restaurant and surroundings are impeccably clean.
    • To ensure that the air-conditioning is at the right temperature.
    • To make sure that the furniture and fixtures are clean and well maintained.
    • To ensure that the restaurant check list is filled in and followed up during all shifts.
  • Administration:
    • To update operations and training manuals as and when needed.
    • To ensure timely submission of all reports.
    • To keep and update departmental training, leave and attendance records.
    • To record daily happenings in the Departmental Logbook.
    • To prepare a Monthly Status Report at the end of each month and submit on or before 7th of the next month.
    • To write concept statements and action planners after the staff discussions and brain storming sessions, of all promotional activities.
    • To prepare Duty Roasters on a weekly basis.
    • To prepare a Yearly Promotional Calendar.
    • To file and maintain all official correspondence.
    • To attend all Food and Beverage meetings and briefing in accordance with the time fixed.
  • Marketing:
    • To be aware of competition/ survey every month.
    • To obtain guest’s feedback on service and quality of food.
